DESCRIPTION
Known as "cumaru", "kumaru" or "Brazilian teak", the tree is a species of flowering tree in the pea family, Fabaceae. The tree is native to northern South America. Its seeds are known as tonka beans (sometimes tonkin beans or tonkin beans). They are black and wrinkled, with a smooth, brown interior. They have a strong odor.
Usually used in desserts and sauces. TOnca beans are used grated, in compotes, creamy desserts, with chocolate, in pumpkin soups, or with sweet potatoes.
Aromatic notes: a blend of vanilla, almond, clove, cinnamon and amaretto.
