The spirits are ground tapioca - starch obtained from the root of the cassava (Manihot esculenta). Tapioca starch has a mild taste and a clear, creamy and homogeneous structure. Tapioca starch has good water binding properties, excellent stability at high and low temperatures. Rich source of calcium. Free of protein and gluten.
