DESCRIPTION
Gari is ground tapioca, a starch obtained from the root of cassava (Manihot esculenta). Tapioca starch has mild flavor characteristics and forms a clear, creamy and homogeneous texture. Tapioca starch has good water binding abilities, excellent stability at high and low temperatures. A rich source of calcium. Does not contain gluten. Application: sauces, desserts, ketchup, confectionery, dairy products.
